Easy Breakfast Prep

How many of you skip breakfast? Skipping breakfast may not be a bad thing, but eating a poor breakfast is not a good idea. So, if you are grabbing cereal or a cold piece of pizza in the morning, this blog is for you. There are several breakfast related food items that you can plan in a short amount of time. Let’s get started.


When prepping breakfast food start with placing bacon in the oven. This is the easiest way to cook bacon and quite tasty too. Line a cooking sheet with foil, place down your bacon and cook at 400 degrees for 25 minutes or until desired crispness.

After this is started, you can cook your sausage. After browning, cover and cook on low heat until done. These can be eaten along side other breakfast foods or on a sandwich with egg and cheese.

The next thing I work on is the Mini Muffins. Mix together the following ingredients.

1 3/4 C flour

1/2 c sugar

2 t baking powder

1/4 t salt

1/4 t cinnamon

1/8 t nutmeg

To the dry ingredients, add 1 egg, 3/4 c milk and 1/4 c softened/melted butter

I use a small cookie scoop to place the batter in the greased muffin pan. This helps tremendously with keeping the pan clean.

Bake 400 degrees for 11-12 minutes. Cool on a wire rack.

You can divide this batter and create different muffins.


Banana Walnut - mix in a ripe banana and 1/2 cup of tasted walnuts*

Blueberry - add blueberries

Chocolate Chip - scoop into muffin tins and add chocolate chips

Cinnamon Coffee Cake - scoop into muffin tins and top with a mixture of 1/2 c brown sugar, 2 T softened butter and 1 teaspoon cinnamon

Pecans - top with toasted pecans

While the muffins are baking, I prepare the French Toast by mixing six eggs, 1/4 c of milk and 1 /2 teaspoon of vanilla extract. I use thicker bread (like Brioche Bread) when preparing this French toast because it will freeze well. After dipping the bread in the mixture cook it in a skillet with some melted butter on both sides. Cool these on a cooling sheet and place in a freezer to freeze for about 30 minutes. Remove from the freezer and place in a sealable bag for freezer storage. When it comes time to reheat, place a slice in the toaster. You may need to toast this twice before eating.

Next up are the Egg Bites. In a blender, froth together 6 eggs, salt and pepper to taste and 1/2 c goat cheese. If you don’t care for goat cheese, you may substitute with cottage cheese. Pour this mixture into six greased regular sized muffin tins. Now you can choose your flavors. Add some of the following items to create the taste you desire.
Spinach, shredded cheese, chopped tomatoes, bacon, sausage, peppers, onions and chives. The possibilities are endless. Experiment and find your favorite. When baking these place a pan of water on the bottom rack. This will keep the egg bites from drying out during baking. Bake at 300 degrees for 30minutes. These are good in the refrigerator for seven days. When reheating these, set the microwave on 50% power and heat for 60-90 seconds.

You can also add these to a bagel or english muffin for a breakfast sandwich.
